You can setup Email Exchange with Outlook 2011 for Mac by following these steps:

Step 1. Open Outlook 2011.
Step 2. Click on Tools, then Accounts.

Step 4. On the next screen, fill out the required information, then click Add Account.

E-mail address Enter your full email address, such as myname@mydomain.com
Method Select User Name and Password.
User Name Enter your full email address, such as myname@mydomain.com
Password Enter the password you use for this email address.
Configure automatically Uncheck
Step 5. Fill out the required fields, then click Add Account.
